Heirloom Tomato Poke

Ingredients
FOR THE POKE:
  • 1 lb. heirloom tomato, cubed
  • 1 avocado, ripe, peeled and cubed
  • 1½ Tablespoons tamari
  • 1½ teaspoons sesame oil
  • 1 Tablespoon scallion, very thinly sliced
  • ½ teaspoon grated ginger
  • ½ teaspoon jalapeno, minced
  • 2 Tablespoons fresh mint leaves
  • ¼ cup daikon radish sprouts for garnish (optional)
  • ½ teaspoons sesame seeds or gomasio
FOR THE RICE:
  • 1 cup white sticky rice
  • 1½ cup water
  • ¼ teaspoon salt
Instructions
  1. Rinse the rice well, at least 5-7 times. Soak in water for 1 hour in a heavy saucepan. Cover and heat to boiling. Reduce the heat to low and simmer for 20 minutes. Do not open the lid while it’s cooking. Allow to rest for 10 minutes covered after it’s done cooking. Fluff with a fork before serving.
  2. Whisk together the tamari, sesame oil, scallion, ginger and jalapeno. Toss with the tomato, scallion and matchstick cut radishes.
  3. Arrange the poke onto the sticky rice and garnish with daikon sprouts and sesame seeds.
