I am completely embarrassed to admit that I only learned how to make an acai bowl this past month. I didn’t get why anyone would want to eat a smoothie, rather than just drink it! But once I had one, I realized how delicious it is-like a healthy ice cream treat!
The trick for easily blending such a thick mixture is blending the acai packet with the almond milk first and then adding the rest of the frozen fruit. The addition of coconut oil helps the mixture keep its shape, but is optional.
1 packet acai (such as Sambazon smoothie packs)
1/2 cup almond milk
1 Tablespoon coconut oil (optional)
1 frozen banana
1/2 cup frozen blueberries
garnish: fresh banana, fresh strawberry, granola, agave, dried coconut
First blend the acai packet with the almond milk until smooth. Add the coconut oil, frozen banana and frozen blueberries and blend until everything is smooth. Spoon mixture out into a bowl and garnish with fresh fruit, granola, coconut and a drizzle of agave if desired.
